hello hi everyone! This is a recipe for a Filipino rice noodle dish called "Pancit" which most traditionally uses a thin rice noodle called bihon. Our version uses vermicelli noodle in lieu of bihon cause it’s a little bit tricky to find, and is also a pretty common substitute. If you can find them both, it's also common to use both forms of noodle for a bit of texture as well. Hope you give this one a shot!

INGREDIENTS

  • 4 cloves garlic

  • 1 tbsp ginger (about 1 inch)

  • 2 lap cheong (Chinese sausage)

  • 8 oz bihon noodle (or vermicelli)

  • 1 cup cabbage

  • 4 shiitake mushrooms

  • 2 green onions

  • 2 carrots

  • 1 lime

  • 1 chicken breast

  • 1/2 medium white onion

  • vegetable oil

INGREDIENTS (sauce)

  • 1/2 cup beef stock

  • 2 tbsp dark soy sauce

  • 4 tbsp low sodium soy sauce (or 2 tbsp full sodium soy sauce)

  • 4 tbsp fish sauce

  • 2 tbsp sambal oelek

  • 1 tsp white pepper

  • pinch of kosher salt

PREP

  • CRUSH and mince the garlic, set aside

  • FINE MINCE the ginger, set aside

  • SLICE the lap cheong, set aside

  • SOAK the vermicelli in hot water for 30 seconds until hydrated, set aside

  • SLICE the cabbage, set aside

  • SOAK the shiitake mushrooms for 15 minutes until tender then slice into strips and set aside

  • SEPARATE the green onions by whites/greens, then slice the whites into 1/4 inch planks, and the greens on a bias as a garnish, set aside

  • JULIENNE the carrots, set aside

  • CUT the lime into wedges, set aside

  • SLICE the chicken breast into strips, set aside

  • SLICE the onion, set aside

ON THE STOVE

  • MARINATE the chicken in 4 tbsp soy sauce and a pinch of kosher salt, and set aside for 15 minutes

  • ADD 4 tbsp vegetable oil to a hot wok, and long yao

  • ADD the chicken and saute for 1-2 minutes until browned, then remove from the wok

  • WIPE down the wok, add 4 tbsp vegetable oil and long yao

  • ADD the carrots, onions, mushrooms, and whites of the green onions and saute for 2-3 minutes until tender, then remove from the wok

  • ADD cabbage to the wok and saute 1-2 minutes, then add chicken + vegetables back to the wok, and toss to combined

  • ADD the vermicelli and sauce to the wok and toss to combine

  • FINISH with greens of the green onions and fresh lime juice
