Hello hi everyone! This recipe is adding to our series on Hawaiian comfort food, reproducing the L&L Drive-Inn Loco Moco. We also did some fun with SPAM last month with a wok fried SPAM fried rice, and have some other new things coming up soon too! I had a lot of fun messing around with this classic mainly cause i grew up eating this stuff, and it's super nostalgic for me. Hope you give it a shot.

 

serves 2

INGREDIENTS (gravy)

  • 1/4 cup beef broth

  • 2 tbsp worcestershire sauce

  • 4 tbsp low sodium soy sauce (or 2 tbsp full sodium soy sauce)

  • 2 tbsp butter

  • 2 tbsp corn starch

INGREDIENTS

  • 1lb 80/20 beef chuck

  • kosher salt

  • pepper

  • white rice

  • macaroni salad

  • 2 eggs

  • vegetable oil

PREP

  • COMBINE all gravy ingredients, set aside

  • SEASON beef chuck with salt and pepper, then form into a patty with a divot in the middle

ON THE STOVE

  • HEAT a cast iron pan as hot as possible, then add 2 tbsp vegetable oil to coat

  • ADD the beef patty and sear for 2 minutes, then flip and cook to preferred doneness

  • REMOVE the patty and add the gravy mixture

  • REDUCE heat to low, then add 2 tbsp butter to the pan

  • STIR until a thick gravy forms, and remove from heat

  • FRY an egg over easy on a separate pan over medium heat.

  • SERVE with a side of rice, macaroni salad, and Hawaiian Sun
